Ranging from melon, honeysuckle and spice to lighter, strawberry-scented wines, our Wildflour Wednesday wine flight has something for everyone. Five fabulous wines: Coucou Counoise, Colors Spin, Wonders, Cobolorum Riesling and Nomine Amoris, and you get to enjoy three of them for only ten dollars.

A Bit about J Brix:
🌱 Garage-Born, Soulfully Crafted

Founded in 2009 by the husband-and-wife winemaking duo Jody Brix Towe and Emily Towe, J. Brix began with just three barrels in their two-car garage. Today, they craft up to 16 different wines per year from their facility in Escondido.

Their winemaking mantra? “Only Love.” They use neutral vessels, native-yeast fermentation, minimal sulfur dioxide; and they leave their wines unfiltered and cold-unstabilized

🍇 Cobolorum Riesling Pét-Nat

Their sparkling Cobolorum Riesling Pét‑Nat hails from Kick On Ranch Vineyard and is beloved—once hailed by The New York Times tasting panel as a “tangy, spicy, citrusy delight.”
Produced from Riesling grapes grown at Kick On Ranch in Santa Barbara County.

Also affectionately known as “Naughty Goblin Bubbles” (Latin Cobolorum means “goblin”), a playful nod to its liveliness and charm.
Made using the méthode ancestrale (Pét‑Nat): wine is bottled mid-fermentation so it naturally carbonates in the bottle.

Unfined, unfiltered, no added sulfites, and bottle-conditioned, meaning sediment and tartrate crystals may form—part of its natural charm.

Alcohol hovers around 12.8%, giving it a crisp yet satisfying body.
Perfect for brunches, celebrations or casual patio hangs (i.e. “brunch in pajamas”).

Colors Spin is a fun, natural wine-style blend crafted annually by J. Brix. The 2023 release is a carbonic co‑ferment of Merlot and Chardonnay sourced from Santa Barbara County.

Its swirled, kaleidoscope-inspired label was crafted from a photograph of a real glass kaleidoscope—calling attention to how the wine’s flavors shift with each sip.

Limited production—only about 30 cases made in 2023—making it rare and sought-after.

Fermentation style: Carbonic maceration brings vibrant fruit flavors, soft bubbles, and playful aromatics.

🍇 J Brix Wonders
- Wonders is one of J. Brix’s special bottlings, typically a single-vineyard Syrah from Santa Maria Valley (usually sourced from Kick On Ranch or similar cool-climate sites).

The name evokes the idea of awe and respect for the vineyard—especially the natural, expressive quality of Syrah grown in California’s cool-climate coastal regions. It's often considered J. Brix’s most serious or contemplative red.
🍇 Nomine Amoris

Nomine Amoris means “in the name of love” in Latin, echoing the J. Brix motto Only Love in life and winemaking.

Made from Pinot Gris grapes sourced from Santa Maria Valley – typically from the Santa Maria Bench vineyards.
Skin-contact for ~14–16 days, imparting distinct coppery hues and mild tannins.

Pressed to neutral French oak and aged for about 5 months.

Made with native yeasts, unfined, unfiltered, no cold stabilization—resulting in natural sediment and live texture.
Colour: Striking ramato/amber tones with a coppery-pink glow.

Aroma & Flavors: Melon, honeysuckle, tangerine, cinnamon spice, dried stone fruit and delicate florals; textured mouthfeel.

Palate: Medium-bodied, gently tannic, crisp finish with a touch of “electric” spice and grip.
