Yes, I'll Eat it in a Box, Yes I'll Eat it with a Fox: The San Diego Lox Bagel

The word "lox" originates from "laks" in Yiddish, and we love that this recipe has become such a favorite among breakfast-goers. The Lox Bagel traces back its roots to Scandinavia, where masterful fishermen would preserve their daily catch of salmon in a saltwater brine. Preserving salmon in this fashion would be adopted by Eastern Europeans and eventually become a staple in Jewish culture. Curing salmon was crucial to preserving salmon long before refrigeration was available. 

At Wildflour, we cure our salmon in-house and cut it ourselves. We love it on top of a Best Friend's Bagel, which we split open and sear on the plancha before we lather it in cream cheese and garnish it with pickled red onions, fried capers and radish sprouts. The flavors that come through are both tangy and savory, leaving your tastebuds delighted and stomach satisfied.
